From Rosendale to Gardner, this is a fun and relaxing trail alongside the Wallkill River. There's a neat bridge north of New Paltz.

Great place to get apples and apple cider donuts! In the fall there are hayrides and pick your own pumpkins/apples. In the winter you can harvest your own Christmas tree.
Historic theater with a great mix of main stream and independent films. Keep an eye out for special live performances and talks from local and regional artists.
A bit of a trek from New Paltz, but the grounds are great to walk around and the tour of the house is pretty interesting.

If you're on the hunt for an adrenaline rush, there is skydiving in nearby Gardiner, NY. Even if it's not for you, it's fun to look up on a clear day and see all the parachutes floating down.
