Created​ to change the way people think about gin, aviation American gin is made in the traditional dry style with anything but a traditional flavor profile. aviation explores the rich, floral and savory notes of lavender, cardamom, and sarsaparilla to capture the lushness, spice, creativity, and freshness of the pacific northwest. this harmonious blend allows the craft spirit to shine on its own as well as when mixed in vintage drinks or contemporary culinary cocktails.

If you haven’t tried this Scandinavian spirit, it starts with a rich combination of honey and star anise flavors and ends with a distinctive dry and peppery note from caraway. aged in premium French oak wine barrels for 10-12 months, gamle draws a lighter and more nuanced barrel character. gamle is a traditionally aged aquavit that was stored on norwegian merchant ships traveling to and from Australia. the trip took roughly a year, leading to a well-aged spirit. we have taken that tradition and made our very own gamle, ready once a year

Westward oregon straight malt whiskey is an original malt whiskey that is inspired by the Irish tradition, but crafted in a unique and distinctively American style. every hand-numbered bottle begins with a wash of 100% locally-sourced northwest two-row barley, which is then fermented with ale yeasts and double pot-distilled for exceptional character and depth. this rare spirit matures in full-size, two-char new American oak barrels for at least two years, allowing oregon’s dry, hot summers and wet, cold winters to contribute to its rich, smooth flavor
