Our most popular cheese is named for a Northern California landmark: the majestic Mt. Tamalpais. Made from Straus Family Dairy's fresh organic milk, this elegant triple cream was our first foray into aged cheeses, & it remains our most popular.

The​ wild bacteria that define this bold, sumptuous triple cream are native to Point Reyes; in fact, we could not make this cheese anywhere else. Aged four weeks & washed w/ a brine solution that tints the rind a sunset red-orange, Red Hawk captures the true essence of West Marin.

We are often asked about the best way to store cheese. Wrapping the cheese in paper is rule 1 but then what? Our cheesemongers put their heads together & came up w/ a design for a cheese safe that would fit easily into the refrigerator. Our Cheese Safe (9.5" x 9.5" x 4.75") is designed w/ a convenient sliding top & the image of a curious mouse branded on top. We will send the Cheese Safe to you along w/ cheese papers & some tips on caring for cheese.
